Also called Chuck Crest, we make a Green Olive & Garlic Paste and rub it all over the meat, sprinkle with Rock Salt, wrap it in foil, and cook it low and slow for several hours, depending on the size of the Hump. It comes out simply divine.
And just a little story… the Hump comes from the Brahman breed cattle, which is the most popular type of cattle we have back in Brazil, due to our tropical climate. But what many Australians don’t know is that it is also very popular around Queensland, which makes Australia together with Brazil and the USA, the biggest producers of this type of cattle in the world.
