A not very popular cut of Beef around these areas, but very much popular at any Brazilian BBQ.
To be cooked low and slow. It comes with a Garlic and Green Olive Paste on the side. We recommend you rub the paste all over the Hump, sprinkle it with some Rock Salt, wrap it in foil and let it cook for around 4 hours at a low temperature. The bigger the size the more time you will need.
